Russian Vegetable Pot Pie with Sauerkraut

Pot pies are not traditional Russian meal. But they are quite popular here. And some people make them with sauerkraut. Why don’t you try that kind of pot pie if you are tired of your regular pot pies, with chicken, for example?

Ingredients for crust:

  • 0 ounces of all-purpose flour
  • 0 ounces of butter
  • 5 tsp salt
  • 1 egg
  • 4 tbsp. water.

Ingredients for filling:

  • 0-1.2 pounds of sauerkraut
  • 4 eggs
  • 5 ounces of semi-hard or hard cheese
  • 1 tsp dry sweet paprika
  • 0 ounces of sour cream
  • salt, to taste
  • olive oil, to taste.

Ingredients for sauce:

  • 1 bell pepper
  • 1 onion
  • 5-5.0 ounces of vegetable broth
  • 4 ounces of cream
  • salt, to taste
  • olive oil, to taste.


  • 1. In a bowl, whisk together flour and salt.
  • 2. Cut the butter into small cubes and mix it into the flour.
  • 3. Add egg and pour in water. Try to moisten all of the flour particles. Form a ball of dough. Cover with food film and set aside in a cold place for 1-2 hours.

1. Rinse the sauerkraut and drain it.

2. Sauté the sauerkraut for 5-7 minutes in olive oil.

3. Transfer the fermented cabbage in a bowl and add cubes of boiled eggs.

4. Add the shredded cheese, paprika, sour cream and salt to taste.

5. Mix all filling ingredients very well.

1. Slice the bell pepper and onion.

2. Sauté them for 5-7 minutes in olive oil.

3. Pour in vegetable broth or water, cover and simmer over moderate heat for 10 minutes.

4. Grind the vegetables coarsely in a food processor.

5. Transfer them back to the skillet. Pour in the cream and stir well.

6. Bring to boil and remove from the heat.

Pot Pie

1. On a floured work surface, roll out your chilled dough. Transfer it to a pie dish. Tuck the crisp in with your fingers.

2. Place the vegetable filling on top.

3. Bake in a preheated oven for 50-60 minutes.

Serve your sauerkraut pot pie immediately with the warm bell pepper sauce. Or chill and then serve with the hot sauce.
