Easy Russian Recipe for Kefir without a Packaged Starter

It is a good idea to make your own kefir at home is you are interested in healthy fermented foods. It is easy and cost-effective. And you may control the quality of your fermented milk product.


  • 1 liter of milk;
  • starter.

To make your own kefir you need a starter. You can use packaged starter culture. But it is not necessary. Your kefir may be even more delicious if you make it without any packaged starter.

As a starter, you can add organic kefir, clabber or sour cream.

2 tablespoons for 1 liter of milk.

But be careful! Kefir or sour cream which is used as a starter must be organic. It must have living beneficial bacteria. Otherwise, you won’t the real kefir. Your milk may turn sour, but won’t be the real healthful fermented milk product.

How to make?

  1. Boil your milk if you use the unpasteurized product. Then cool it to 100-104 °F. Warm the milk to 100-104 °F if you have the pasteurized one.

  2. Transfer the milk into a glass jar.
  3. Add 2 tbsp. of sour cream, clabber or kefir.

  4. Cover the jar and keep it in a dark place at room temperature for 20-24 hours.

Your own organic kefir is ready. Store it in a refrigerator.

Eat the kefir within 3 days. As a new starter, you may use it for 2 weeks.
