It is a good idea to make your own kefir at home is you are interested in healthy fermented foods. It is easy and cost-effective. And you may control the quality of your fermented milk product.
- 1 liter of milk;
To make your own kefir you need a starter. You can use packaged starter culture. But it is not necessary. Your kefir may be even more delicious if you make it without any packaged starter.
As a starter, you can add organic kefir, clabber or sour cream.
2 tablespoons for 1 liter of milk.
How to make?
- Boil your milk if you use the unpasteurized product. Then cool it to 100-104 °F. Warm the milk to 100-104 °F if you have the pasteurized one.
- Transfer the milk into a glass jar.
- Add 2 tbsp. of sour cream, clabber or kefir.
- Cover the jar and keep it in a dark place at room temperature for 20-24 hours.
Your own organic kefir is ready. Store it in a refrigerator.
Eat the kefir within 3 days. As a new starter, you may use it for 2 weeks.
